Luchi is the Bengali equivalent of Indian puri, a deep fried puffed bread. It is best enjoyed hot with curries or something sweet.
Mix all ingredients together (add the additional 2 tbsp of water if your dough is on the dry side).
Knead well for a minute or two.
Rest dough for 20 minutes, covered.
Roll into 10-12 balls.
Roll out into rounds of around 7-8cm diameter.
Heat oil to almost smoking point (shouldn't be smoking).
Place each rolled out dough in hot oil, frying for 8-12 seconds on each side.
Serve with labra, curry or something sweet. Enjoy!
